<br />Mix sugar, syrup and cream in a saucepan, preferably plastic coated. Boil vigorously for 15-20 min.<br />Pour a little of the hot mixture into a cup of cold water. Can the batter to form into a round ball, it is ready, otherwise the batter cook for a few minutes.<br />Take the pot aside and mix in shortening and almonds.<br />Pour the mixture into small buckling shapes covered on a plate. Let the toffee cool.</div>

What to do!<br />
Cut the butter into small pieces.<br />

a large whole chicken, at least 2 kg. in weight, deboned<br />1/2 kilo of ground chicken meat (you can substitute pork)<br />1 onion, finely chopped<br />1/2 c. of finely sliced onion leaves<br />1 chorizo de bilbao, finely chopped<br />2-3 tbsps. of sweet pickle relish<br />3 hard-boiled eggs, shelled<br />1 egg, beaten<br />3 slices of day-old bread, cut into small pieces and soaked in 2 tbsps. of milk<br />salt<br />pepper </div>

<strong><u>Cooking procedure :</u></strong> <div style="text-align: center;">
Season the deboned chicken inside and out with salt and pepper. Let sit in the fridge for a few hours. <div style="text-align: center;">
To make the stuffing, just mix together the onion, onion leaves, sweet pickle relish, ground chicken or pork, chopped chorizo de bilbao, beaten egg and bread. Season with about a teaspoonful of salt and half a teaspoonful of ground pepper. <div style="text-align: center;">
Take the chicken from the fridge. Lay it flat on a large plate, breast side up. Fold the neck skin and tuck it underneath. Spoon the stuffing into the cavity. When half the stuffing is in, take the hard-boiled eggs and arrange them in a row along the middle of the cavity. Spoon the remaining stuffing in. Pull the skin on the tail end so that very little of the stuffing is exposed. <div style="text-align: center;">
Carefully slide the stuffed chicken onto the <a href="http://casaveneracion.com/adjustable-roasting-rack/">roasting rack</a>. Roast in a preheated 170<sup>o</sup>C oven for 1 hour and 20 minutes. <div style="text-align: center;">
Remove from the oven and cool for at least 15 minutes before slicing. <br />

What a great summer! The time was 0:00, we went and took a walk by the harbor. It was so lovely fine weather in the middle of night and the light procedure and hot air. (Swedish summer always bright at night and less sun in the day and more rain) Put us on the pier and splashed our feet in the lake, what a great feeling! Holidays start taking it out and Back to reality so soon! School starts next week and my little girl is going on in training to among the older group of children. Mom little concerned that my princess be with those older kids. Hope will be fine. There no much to tell what we have done during the holiday. We had maybe less spare time. We have to build our cottage , but we had fun both me and Amanda with her grandmother who came to visit. Will upload a picture of our cottage later.<br />

Gör så här</h6>
<strong>1. </strong><b>Mördeg</b> <strong>2. </strong>Nyp ihop tärnat kallt smör med vetemjöl och florsocker. <strong>3. </strong>Tillsätt äggen och arbeta samman tills degen precis går ihop. Knåda inte. Tillsätt vatten vid behov. <strong>4. </strong>Plasta degen och låt den vila i kylen i minst 30 minuter. <strong>5. </strong><b>Lemoncurd</b> <strong>6. </strong>Koka upp citronsaft från 6 av citronerna och rivet skal från 9 med strösocker och smör. <strong>7. </strong>Sila vätskan och släng skalet. <strong>8. </strong>Blanda ut majsstärkelsen med saften från de sista citronerna och rör ner detta i den varma vätskan. <strong>9. </strong>Vispa samman ägg och gulor. <strong>10. </strong>Rör ner äggen i vätskan, ställ tillbaka på spisen och sjud under vispning tills krämen tjocknar. <strong>11. </strong>Häll över krämen i en ren skål och låt svalna. <strong>12. </strong><b>Hallonmaräng och montering</b> <strong>13. </strong>Sätt ugnen på 175 grader. <strong>14. </strong>Kavla ut mördegen, fyll en pajform och frys. <strong>15. </strong>Pensla botten på det frysta pajskalet med uppvispat ägg och täck kanterna med folie så de inte sjunker ned. Förbaka i cirka 10 minuter. <strong>16. </strong>Fyll pajskalet med lemon curd. <strong>17. </strong>Höj ugnstemperaturen till 250 grader övervvärme/grill (om inte marängen ska brännas av med gasbrännare). <strong>18. </strong>Vispa äggvita, citronsaft och 1 dl strösocker till ett fast skum. <strong>19. </strong>Tillsätt ytterligare 1 dl strösocker och vispa till ett fast skum. <strong>20. </strong>Rör sönder hallonen med resterande strösocker och rör ned i marängen i omgångar. Börjar med att mosa bananen med en gaffel. Vispa sedan äggen i en skål vid sidan om. Blanda sedan äggen och den mosade bananen och vispa ihop med lite kanel och pyttelitet vaniljsocker måste inte ha i vaniljsocker, det blir sött ändå p.g.a. bananen. Stek sedan i olja på medelvärme. De behövs bara stekas några sekunder på varje sida. Servera med keso, lättkvarg, turkisk yoghurt, grädde eller bär. </div>

How to do it!<br />

Smält smöret i en kastrull eller i en skål i mikron. Hacka schalottenlöken fint. Krossa vitpepparkornen i en mortel. Häll vinäger, vatten, schalottenlök och vitpepparn i en såskastrull. Låt det koka upp. När vätskan nästan helt kokat bort tillsätt då ytterligare vatten. (Obs! Viktigt att vätskan nästan helt kokat bort innan du tillsätter vattnet, annars blir det för mycket vinägersmak kvar.) Sätt kastrullen eller skålen i vattenbad. (Med vattenbad menas att man sätter kastrullen/skålen i en annan större kastrull med vatten som man värmer upp.) Tänk på att vattnet ska vara varmt men inte koka i vattenbadet. Tillsätt äggulorna, en i taget och vispa. Såsen tjocknar nu. När såsen tjocknat och fått en krämig konsistens, ta bort den från vattenbadet och värmen. Ställ skålen eller kastrullen på en kall våt disktrasa (detta är för att undvika eftervärme som kan förstöra såsen). Låt gärna stå och vila ca 2-5 minuter. Kontrollera under tiden att det smälta smöret inte är varmare än 50-60°C för att vara på den säkra sidan. Du ska kunna sticka ner ett finger i såsen utan att bränna dig. Tillsätt därefter det smälta smöret, lite i taget under kraftig vispning. Såsen ska binda smöret till en jämn tjock smet. Fortsätt vispa såsen i några minuter extra efter att sista smöret vispats i. När du vispat ner allt smör och såsen har en tjock krämig konsistens, fortsätt vispa ytterligare några minuter. Vispa ner dragon och persilja och servera direkt eller håll varm i vattenbad ca 40°C. (Det du absolut inte ska göra är att låta den stå i en kastrull på en platta med värme på. Då är det stor risk för att den separerar.) OBS! Tänk på att såsen skär sig vid 70°C, den får alltså aldrig värmas varmare än så. Tänk även på att även om såsen inte är 70°C vid ytan kan den vara det i botten. Därför måste man vispa ordentligt. <br />

Gnid in ett highballglas med myntabladet, riv därefter sönder dem en gång och lägg dem i glaset. <br />Fyll upp glaset till hälften med krossad is och häll i övriga ingredienser. <br />Använd en trämortel eller något annat verktyg för mala ihop myntan med övriga ingredienser. <br />Fyll upp glaset med mer krossad is. <br />Toppa med sodavatten. <br />Om du inte vill använda glaset för att mortla din Mojito så fungerar din cocktailshaker bra som en mortelskål. <br />
